Most of my dinner are recipes that are easy and take under 40 mintues form start to finish. This one will be one of my favorites. I made this last night and it came out great ( it taste a lot better than it looks) .
Just wanted to share with all you guys out there who love to east seasonly, without the hassle of spending lenhtly hours in the kitchen, or even dishing out lots of money.

  • Asparagus & Parmesian Pastry :
  • Ingredients:
  • 1 sheet of fresh or frozen ready-rolled puff pastry cut into 4
  • 300g asparagus trimmed and cooked in simmering water for 2 mins
  • 2 tbsp mascarpone mixed with 3 tbsp grated parmesan
  • parmesan shavings to serve
  • olive oil
Method:
Heat the oven to 200C/fan 180C/gas 6. Spread the mascarpone mix over the pastry tarts, leaving a 2cm border. Lay a quarter of the asparagus on top of each. Drizzle with olive oil. Bake for 20-25 minutes until crisp and golden. Sprinkle with parmesan shavings.









Garlic Shrimp with baby tomatoes:


Ingredients and Method:

  • 2 tablespoons olive oil
  • 3 cloves garlic, crushed
  • handful of baby tomatoes halved 
  • 1 pound fresh or frozen medium shrimp, peeled and deveined
  • 3 tablespoons minced fresh Italian parsley

Heat the oil in the skillet over high heat. Place the garlic and shrimp in the skillet and stir until garlic is lightly browned and shrimp turns pink. Add tomatoes and 2 tablespoons of water to the skillet. Let simmer on medium heat for 10 minutes.   And voila! 

Let me know how it turn out, or if you made substitiion, additions. I’m not a ver conventional cook, so i use recipes as a guideline but tend to stray. But I was very pleased with the results – and I had it with some leftovers Biyriani from the day before. It was delish!
